Preheat your oven to 400°F (200°C). Remove the chicken from its packaging and pat it dry with paper towels. This helps make the skin crispy. Place it in the middle of a large roasting pan.

Rub 1 tablespoon of olive oil all over the chicken, making sure it’s nice and coated. Sprinkle salt, pepper, thyme, and rosemary all over (inside and outside). Stuff the cavity of the chicken with the lemon halves and a few garlic cloves.
